  • 2 tbsp olive oil

  • 1 cup onion, finely chopped

  • ½ cup celery, cubed

  • 1 ½ cups Arborio rice

  • Pinch of saffron threads

  • ½ cup dry white wine

  • 1 lb cooked lobster meat (about 3 cups)

  • 1 tsp kosher salt

  • ¼ tsp black pepper

  • ¾ cup Parmesan cheese, grated

  • Chives, sliced (for garnish)

  • Saucepan (to warm broth)

  • Wide, heavy-bottomed pot for risotto

  • Wooden spoon (for constant stirring!)

Pro Tip: Keep the clam juice warm while cooking. Adding cold liquid will slow down the risotto and risk making it gummy.


Step 1: Warm the Broth

Heat clam juice and water in a saucepan until steaming; keep warm on low heat.


Step 2: Start the Risotto

Sauté onion, carrot, and celery in olive oil until softened. Add Arborio rice and saffron, stirring constantly until lightly toasted. Deglaze with white wine and let it almost fully absorb.


Step 3: Add Broth Slowly

Add broth ½–1 cup at a time, stirring constantly and waiting until nearly absorbed before adding more. Continue until rice is creamy and al dente (15–20 minutes).


Step 4: Finish with Lobster & Parmesan

Remove from heat. Gently fold in lobster, salt, pepper, and Parmesan. Adjust consistency with a splash of broth if needed. Garnish with chives.
